  • • 1 pack of Gourmet Evolution Plant Based Mortadella
  • • 1 cup of arugula
  • For the spicy vegan mayo:
  • • 1 cup of cashews
  • • 1 lime or rice wine vinegar
  • • Maple syrup or agave
  • • Light soy sauce or tamari
  • • Sriracha
  • 1. Boil the cashews for 10 minutes.
  • 2. Drained cashews and add with the rest of the ingredients to a blender.
  • 3. Start blending on low and then slowly increase speed until the mixture is smooth and creamy.
  • 4. Spread the vegan mayo evenly onto the bread slices.
  • 5. Layer one slice with the mortadella and arugula, cover with the top half of bread.
  • 6. Serve and enjoy!!!
